Apple Topped Pancakes. Or Apple topping on it’s own. Decisions, decisions…

Apples spiced to taste like Fall.  You know what I mean… full of butter, sugars and great spices.  

They are soft and full of flavor. This, my friends, is the glory of fall.  

I absolutely love fall.  Everything about it.

The baking aspect is my favorite, though!

 I actually made apple cider donuts the other day with HOMEMADE apple cider y’all.

Pretty certain I won’t be buying apple cider this fall. I will be sharing both the cider and donut recipes soon. ;)

Anyway, the other day I was making apples for my favorite Apple Crisp for Two recipe, when I realized I had never made a apple kind of breakfast.  

I looked in the fridge to see what I could come up with and realized I still had some leftover pancakes from breakfast.  That’s when I knew.  Pancakes and apples.

Let’s talk about how this recipe came together…

Apples spiced to taste like Fall.  Let me give you a fair warning about this recipe: it’ll be hard not to eat all the apples straight out of the pan.

This recipe is really just taking my favorite parts from other recipes and combining it into one.

If you’ve made my pancakes before, you know how easy those are (I think lots of you love it because it is by far my most popular pin on Pinterest.  WHAAT?!).

 And if you’ve made my apple crisp before, this is just slightly different.  I added some milk and cornstarch to thicken it so it really feels like a maple syrup over the top.  

I didn’t want some droopy ol’ apples falling over my pancakes. They had to be apples drenched in a perfect syrup!

These are perfectly sweet to be just enough over pancakes for breakfast.  They aren’t overwhelming at all, and you’ll keep coming back for more!

It is just like a drizzle of maple syrup- only better.  

I think I might ditch the maple syrup from here on out.  This is a million times better!

Definitely will be on repeat all Fall long!

Apple Topped Pancakes

What are you going to need for this?

  • Butter
  • Apples
  • Brown Sugar
  • Cinnamon
  • Nutmeg
  • Vanilla
  • Cornstarch

And all you’re going to need is a pan, spatula and small bowl.

The directions are crazy easy!

Chop those apples nice and thin. Toss them in a skillet with the butter, sugar, spices and vanilla. Keep it on medium low heat until it’s all combined and looking saucy.

Mix the cornstarch and water in a small bowl and add to the party. Bring it to a boil and mix until it because a nice glaze/syrup consistency. Remove from heat, transfer to a bowl and enjoy.

Seriously, it’s that easy!

Ingredients
  

  • 2 tbsp. butter
  • 2 large sweet apples cored, peeled & sliced
  • 1/4 cup water
  • 1/4 cup brown sugar
  • 1/8 tsp. cinnamon
  • dash of nutmeg
  • 1/2 tsp. vanilla
  • 1/2 tsp. corn starch
  • 1/4 water
  • Pancakes: follow this recipe

Instructions
 

  • In a saucepan over medium heat, melt butter, then add apples. Stir occasionaly for about 2-3 minutes allowing the apples to soften.
  • Add 1/4 of water, brown sugar, cinnamon, nutmeg and vanilla.  Stir until combined and allow to cook for another 2 minutes or so on medium low heat.
  • In a small bowl, mix 1/4 cup water with corn starch.  Add to the apple mixture and let it come to a boil. Boil until it reaches desired thickness (about a minute or two).
  • Transfer to a bowl and keep warm until you're done making the pancakes.
