Ground Turkey & Sweet Potato Hash

I can’t believe I have never posted this meal on the blog! This one is constantly on repeat in our home because not only is it simple and healthy with just a few basic ingredients, but it is DELICIOUS! It is full of wonderful flavors and makes your home smell heavenly.  One of the things I love to do with it is play around with different spices.  Sometimes I will add Oregano, other times some Thyme, but always always always, Basil! I love Basil in everything.  Yum!

Ever since I discovered ground turkey, I have never gone back to ground beef.  I now make turkey meatballs (which are much better than ground beef meatballs, if you ask me!), turkey burgers (so much juicier than ground beef!), meatloaf, and our traditional Cuban meal of piccadillo with ground turkey.  I find it to have more flavor and be far juicier than ground beef and because of that have never gone back.  I also recently found a great deal for ground turkey of $1.39 per pound at Aldi so I knew I had to stock up and make my favorite recipes to post here (and maybe I will experiment with some new ones).

This ground turkey recipe is so positively simple.  Just brown your ground turkey just like you would brown ground beef.  Then add in some garlic (ok, lots of garlic!), and spices along with the sweet potato.  Mix it well and add your favorite type of broth (I recently used veggie broth for the first time, but chicken broth is also wonderful) so the sweet potato cooks well.  Stir often, because it will very quickly stick to the bottom of the pan (the broth also helps with that!).  As soon as the sweet potato is done, transfer it to a casserole dish and top with cheese (I used the Kraft Italian 5 Cheese blend and also a bit of freshly shaved Parmesan). Pop it in the oven until the cheese melts and it is done! You can also cook it all in a large cast iron skillet and transfer that whole thing into the oven so you do not have to dirty two dishes. ;)

Ground Turkey and Sweet Potato Hash

Ingredients:

  • 2 tbsp extra-virgin olive oil
  • 1 lbs extra-lean ground turkey
  • 1 tsp garlic clove, minced
  • 1 small onion, diced
  • ½ cup sweet yellow pepper, diced
  • 1 ½ cup sweet potato, diced
  • 1/2 tsp Oregano
  • 1/2 tsp Basil
  • Salt and freshly ground black pepper
  • Enough veggie or chicken broth to cover sweet potato (about 2 cups)
  • ½ cup shredded Italian cheese (or your favorite!)
  • Fresh Parsley for garnishing

Directions:

  1. In an large pot or this Cast Iron Skillet, heat olive oil over medium high heat.
  2. Add ground turkey and garlic.Using a wood spoon, break up the turkey while it cooks. Stir occasionally and cook for about 7 minutes.
  3. Add onions and yellow peppers and cook until onions are gold brown.
  4. Add the sweet potato, basil, oregano, salt and pepper.  Then add the broth.
  5. Cover the skillet and cook until they are tender. Stir occasionally so it does not stick.
  6. While the sweet potato is cooking pre-heat the oven to 400 degrees.
  7. When the sweet potato is tender, transfer to a oven proof dish and add shredded mozzarella cheese and bring the dish to the oven to melt the cheese (or if you are using a skillet, put that straight into the oven)
  8. When the cheese melts, remove from the oven and garnish with parsley.

*For a little kick, add a bit of chili powder or red pepper flakes!
