Healthy Roasted Garlic Hummus

Hummus.  Roasted Garlic Hummus, to be exact.

This is the snack of champions, in my little ol’ humble opinion.  I always have a pack of garlic hummus in my fridge with pita chips in the pantry (the BJ’s brand is my absolute favorite!) and snack on this way too often.  Okay, maybe it’s not too often.  Hummus is healthy after all, isn’t it? This is one of the best afternoon snacks when I’m at my computer, typing away at my latest blog post.

The other day, as I was typing one of those said blog posts, I was chowing down some hummus with carrots and pita chips when I realized I had never made my own hummus.  Why did I keep buying the packaged kind when I could make my own for far less money and would probably give me a greater amount to store in my fridge? I wasn’t sure why it had never occurred to me, but I made sure to jot down garbanzo beans on my grocery list for that evening.

When I got home with groceries around 8pm, I knew I couldn’t wait until the following day to try this.  I grabbed my food processor and dumped the can of chickpeas in the food processor (yeah, I kinda cheated using canned beans, but this girl didn’t have time to wait for dry chickpeas to soften up!). I added some olive oil, tahini (you could totally make it without this, but I wanted that little Mediterranean kick!), lemon juice and other good stuff.  After that, I simply whirled it a few times and it was ready!

Chickpeas and garlic is the perfect combo for any snack, no matter what your day is like!

I got the bag of my favorite pita chips and dipped one in.  Icouldn’t even wait for it to be refrigerated.  Once I tasted it, I knew I wouldn’t be buying prepackaged hummus ever again.  THIS IS AMAZING! And my favorite part? I could adjust the flavors to my liking (and you can, too!).  I added a little more garlic and some water to make it a little creamier.  It was so delicious, I had to stop myself from eating the whole thing right out of the food processor!

  4. I love making my own hummus, but it never tastes quite like the grocery store. It always feels like it’s missing something. I tried nutritional yeast and it helped a bit. Maybe increase the salt? I will definitely try your recipe!
