Cinnamon Sugar Cream Cheese Cookies

Pillow like cookies that are so fluffy, they melt in your mouth!

Ingredients
  

  • 1/2 cup butter softened
  • 4 oz cream cheese softened
  • 1 1/2 cup powdered sugar
  • 1 egg
  • 2 tsp vanilla
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/8 tsp salt
  • 1 3/4 cup flour
  • 1/4 cup sugar
  • 1 tbsp cinnamon

Instructions
 

  • Preheat oven to 375 and line a baking sheet with parchment paper.
  • In a large bowl, beat the butter and cream cheese until fluffy, about 2-3 minutes. Add in the powdered sugar, and beat again. Add the egg and vanilla and beat again.
  • In a separate bowl, combine the flour, baking powder, cinnamon and salt. Slowly add to the butter mixture while beating on low.
  • Whisk the sugar and cinnamon in a small bowl.  Roll the dough into balls and then roll in the cinnamon sugar until fully coated. Place on baking sheet.
  • Bake for 8-9 minutes or until the bottoms are lightly golden. They will look puffy and underdone. It's okay! Let them sit on the baking sheet to cool for 10 minutes and they will set up perfectly. Transfer to a wire rack to fully cool and enjoy!
