Fruity Pebbles Cookies

These Fruity Pebbles Cookies are everyone's favorite cookie. Nostalgic with that classic cereal milk taste, these really hit the spot! No chilling required ;)

Ingredients
  

  • 2 1/2 cup fruity pebbles
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter room temperature
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla extract

Glaze and Topping:

  • 1 cup powdered sugar
  • 3-4 tbsp milk
  • 2 cups fruity pebbles

Instructions
 

  • Preheat oven to 350 and line a baking sheet with parchment paper. Set aside.
  • Add Fruity Pebbles to a food processor and blend or toss into a zip top bag and mash until fully crushed. You want about 1 cup of crumbs.
  • Combine with the dry ingredients (flour, baking soda and salt) and set aside.
  • Add butter and sugar to a mixing bowl and cream for 3-4 minutes. The color will get light and it'll be fluffy. Add in eggs and vanilla and beat again.
  • Add the dry ingredients and beat until just combined. Then use a spoon or spatula to bring it together into a large ball.
  • Divide the cookie dough into 8 large balls or 16 smaller balls. Bake for 10-12 min or until lightly golden (big cookies could take 2-3 min more).
  • Let them fully cool. While they do, combine the glaze ingredients in one bowl and prep Fruity Pebbles in another.
  • Once cooled, dip the tops of the cookies in the glaze followed by the Fruity Pebbles cereal. Let them sit for a few minutes to set and enjoy!
