If you’re anything like me, a gooey apple dessert with a crunchy topping is something you crave nightly in the fall. This cozy Cookie Butter Apple Crumble fits the bill!

The apples are baked to perfection in a cinnamon and brown sugar situation which makes them gooey and it has dollops of creamy cookie butter dispersed throughout that melt beautifully into said apples.

The buttery crumble topping is everything you’d expect from an apple crumble topping, except it has crushed cookie butter cookies (I used Biscoff, of course!) which brings out even more of that delicious caramel cinnamon flavor I love in the fall.

Serve this for Thanksgiving dessert or make it at home for a little cozy weeknight treat. Either way, you’re definitely going to come back for seconds!

For the filling:

  • Apples: the star of the show, so choose a good one! I know people go for tart in apple desserts, but I often stick with a slightly sweet one like Gala.
  • Cookie Butter: this is the star of the show so choose a good one! I always go for Biscoff!
  • Lemon juice: Just a little to keep the apples from browning!
  • Brown sugar: dark or light work just fine here.
  • Cinnamon: to enhance the cookie butter flavors!
  • corn starch: just a touch to make that saucy jammy apple filling a little thicker!

For the Topping:

  • flour: a classic in a crumble topping
  • brown sugar: again, light or dark are ok. Use what you have!
  • butter: a whole stick because YUM. Salted or unsalted work fine.
  • cookie butter cookies: crushed to blend right into the topping. Again, I use Biscoff here!

Instructions:

Chop your apples into small, even pieces. Toss in a bowl with the lemon juice. Then add in the brown sugar, cinnamon and cornstarch mixing until combined.

Pour into an 8×8 baking dish. Top with dollops of cookie butter throughout the top.

In a small bowl, combine the flour, brown sugar, crushed cookie butter cookies and melted butter. Use a fork or your fingers to work through it until it’s crumbly. Top the apples with that crumble mixture.

Bake in a preheated oven at 350 for 40-45 minutes or until bubbling and jammy throughout.

Remove from the oven and let it sit for 10 minutes before serving.

Tips, Alternatives and Substitutions

If you’re not sure if you’d love a tart apple crumble or a sweet one, try mixing apples. A combination of green Granny Smith and red Gala apples would also be lovely.

If you don’t have fresh lemons, just use a touch of the bottled kind. No worries at all!

Make ahead of time. This one is certainly able to be prepped ahead of time which makes it such a perfect Thanksgiving dessert.

Prep everything and bake it on the day of serving early in the morning and let it sit out til ready to serve. You could also pop it in the oven for 10 minutes before serving to warm up again!

How to Serve

There is only one way. With vanilla ice cream, of course!

You can also make fresh whipped cream by beating together 1 cup of cold heavy whipping cream and 2-3tbsp of powdered sugar.

For extra richness, a drizzle of melted cookie butter on top would be delicious and lovely. You could also drizzle some classic caramel or salted caramel.

How to store:

Refrigerate leftovers for up to 4 days.

Reheat in the microwave or oven. Keep in mind it won’t be as jammy when you reheat it, but it will be just as delicious!

For microwave, serve your portion and heat for 1 minute. For oven, serve in an oven safe dish, place in a cold oven and set it to 350. When it beeps, it will be fully heated through.

Variations

Use any fruit you’d like! This would be lovely with pears, or even a mix of apples and pears.

Use the cookie butter of your choosing. Amazon has a few different brands. Creamy or crunchy are also delicious variations.

Add oats to the crumble mixture. Add in 2-3 tbsp of rolled oats to the crumble mixture for a different texture and flavor. It toasts beautifully with the cookie butter.

Make them minis! I love making these in individual ramekins for hosting. So easy to serve and they look so much prettier this way.

  • 4-5 apples peeled, cored and. chopped into small pieces
  • 2 tsp lemon juice
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1 tsp cornstarch
  • 1/2 cup cookie butter spread

Crumble Topping

  • 1 1/4 cup flour
  • 1/2 cup brown sugar packed
  • 8 tbsp butter melted
  • 6 Biscoff cookies crushed

Instructions
 

  • Preheat oven to 350 degrees and grease an 8×8 baking dish.
  • In a large bowl add the apples and toss with lemon juice. Add in the brown sugar, cinnamon, and cornstarch and toss until combined. Pour mixture into baking dish.
  • Add dollops of cookie butter throughout the top of the apples.
  • In a small bowl, whisk together the flour, brown sugar and biscoff cookies. Add in the melted butter and crumble with your fingers or a fork until combined. Spread over the top of the apples.
  • Bake for 40-45 minutes or until bubbly and jammy. Let it rest for 10 minutes before serving with ice cream!
