Roasted Sweet Pepper Hummus

I have a pretty awesome hummus story. Doesn’t have to do with Roasted Sweet Pepper Hummus in particular, but  I just have to share it.

So one day, I bought a hummus and went on home. I popped it in the fridge and never opened it.  About a week later, I see a story trending on the internet about a recall of certain brand’s hummus.  The way to determine if you had an affected one was dependent on the expiration date.  I checked mine, and sure enough, it was a bad one.  So I tossed it without evening thinking twice about it.

Mikey got home from work later on and I was casually mentioning it to him when he told me to check if there were any offers online for the inconvenience.  I didn’t check, but he did and within a week, I had 2 manufacturer’s coupons in my mailbox.  They sent two coupons for 2 tubs of free hummus!!  I stashed them away in my glove compartment (why do I always think that’s a great idea? Sure they’re always with me, but I also always forget about them!) and went about my week.  The following week was a get together that we were hosting.  I was panicking because I didn’t plan ahead and now I didn’t have an appetizer.

So off to Publix I went.  As I was getting there, I remembered my coupons! I was so excited since this right here was gonna be the appetizer! As I approach the hummus fridge, I see a tag that says buy one get one free.  I almost just took two since I had two coupons for free hummus, but then I thought, “hey, maybe this is a real thing and I could leave here with four!”

So with a cautious smile, I approached the cashier and told her I had two manufacturer’s coupons.  She told me I wouldn’t be able to take 4, it would just be two.  I tried to reason with her, but she just said no.  I almost put it back when I asked her, “would you mind trying?” She reluctantly agreed and to her (and my) surprise, IT WORKED! Guys, I walked out of Publix with 4 free tubs of hummus.

I was so proud. But I forgot the pita chips.  Cause that’s how I roll. hahahaha

Lesson learned: Always ask nicely & if they say no, try once again. It might work. But I’m sure Publix employee should don’t appreciate that advice. Hahaha

Well, after that forgotten appetizer incident, I told myself that wouldn’t happen to me again.  I had to figure out what I could always have on hand that would be perfect for guests who stop in unexpectedly or a little get together.  Truthfully, I didn’t really want to go for the typical chips and salsa. After opening the fridge and seeing my beloved container of my favorite brand of hummus, I knew that was it!

I searched for recipes all over, but couldn’t find one I looooved.  So I made up my own.  Cause that’s what I do.  Heh! Not only was this easy, but it was so good, you guys.  SO GOOD. I knew this was going to be my new go-to.

And it’s true.  I don’t buy hummus all that often anymore.  I make my own and it’s delish. The reason it’s my new favorite things is because I can play with the flavors, switch things up and just really make it how we like it.  Sometimes that means a little spice, other times that means more of a tahini kick.  And even better, an extra sprinkle of lime juice. Mmm…

You may remember my basic hummus recipe from a few months back.  It was easy, delicious and full of garlic.  This one is so similar, but the biggest difference? Yep, you guessed it! The roasted sweet peppers.  I wish I could make this and invite you all over to enjoy it with me (served with BJ’s pita chips cause those are the besttttt). The peppers give it a smoky taste, but there’s also a slight sweetness to them.  So absolutely delicious.  I can devour this in one sitting.

  3. YAY COUPONS! I love scoring free healthy items! My youngest daughter is 1.5 and only has 3 teeth, so we eat a lot of hummus as a source of protein.

  6. I have a hummus story as well, except it’s more of a guilt story than a “4 FREE TUBS” kind of story. Yesterday, I remembered I have a tub of hummus in the fridge. Don’t worry, mine was still good! ;) I sat down with some chips and the hummus and we were are sitting down playing cards. Before I knew it, I had eaten the whole tub! Ha ha! Clearly not as glam as your story…. I’ve made hummus before, but never Roasted Sweet Pepper (which is my favorite kind.) I’ll have to give it a try for sure!

  9. Nice story. Hahahaha. I’m not sure if I would have the gut to ask a second time. So brave if you! My husband and I love hummus. We often eat it as late night snack with apples (I know sounds weird) and tea. Your recipe looks good. When I make my next hummus I’ll try yours and might even look into the roasted garlic.     It looks fanatastic , I go through phases where I CRAVE hummus and the roasted red pepper is one of my favs. Too funny about the coupon, I have had trouble in the. Past with the same vendor not wanting to take the multiples like that, and I am not talking 5 -10 coupons for the same item I had 2 or 3 kind of like you.
