Crinkle Top Cookie Butter bars have a crumbly crust and gooey cookie butter filling that make them absolutely divine!
They come together quickly and easily with just a handful of ingredients (seriously, just 5 ingredients).
They have become a fun go to late summer treat because they really do feel like a transition to fall dessert.
I love the layering of it, as well. They’re as pretty as they are delicious.
Something I love about these is that the flavor is subtle. It’s not in your face cookie butter.
It’s a shortbread, very buttery flavored crust. Then the filling is cookie butter and brown sugar based with gives it a really nice, smooth flavor.
I especially love this one paired with a cup of piping hot coffee!
What you’ll need:
- Butter: unsalted is my favorite!
- Flour: regular ol’ all purpose flour
- brown sugar: light or dark work well
- cookie butter: I used Biscoff but any works!
- eggs: large eggs, room temperature preferably
How to make these:
It’s so simple!
Prep your baking dish and preheat then oven.
Combine the crust ingredients and press into the bottom of the baking dish. Then bake for 15 min and let it cool for a bit.
Meanwhile, combine your filling ingredients. It’s going to be the texture of brownie batter.
Pour over your prepared crust and bake again until the center is set.
You’re going to want to let these fully cool before removing from the pan and cutting.
That will give them the perfect crinkly tops you’re looking for – and believe me, they’re extra delicious!
Can I make these in advance?
Yes, you can make them a day in advance and they’re still good.
How long can I store them?
2-3 days is my preference. The crinkly tops are best on day 1 and 2.
Do I need to use Biscoff Spread specifically?
Definitely not! You can do any variation of cookie butter and they’ll be delish!
Crinkle Top Cookie Butter Bars
Ingredients
Shortbread Crust:
- 8 tbsp unsalted butter room temperature
- 1/4 cup light brown sugar packed
- 1 cup flour
Filling:
- 3 eggs
- 1 1/4 cup light brown sugar
- 1/2 cup cookie butter
- 1/2 tsp vanilla
- 1/2 cup flour
- Pinch of salt
Instructions
- Preheat the oven to 350 degrees. Line a baking dish with parchment paper and then add cooking spray.
- Combine the butter, brown sugar and flour in a bowl until a dough forms. Press it into the bottom of the baking dish and bake for 15 minutes.
- As the crust cools, combine the eggs, brown sugar, cookie butter, vanilla, flour and salt. Pour into prepared crust and bake for 30-35 min or until it is set.
- Let it cool completely and then remove with the parchment from the baking dish. Slice into bars (they will crinkle as you cut it) and enjoy!
