Everything you love about a McGriddle: the pancakes, sausage, eggs, cheese and maple flavor in one big overnight casserole dish.
This one is so fun! The kids love it and I love that it’s a fun treat that comes together quickly in one dish.
AND you can prep it the night before and it’ll be ready to simply take out of the fridge and bake first thing of the morning.
It’s really fun for sleepovers and holidays, and let’s be honest, cheaper for feeding a crowd too!
McGriddles for a family would cost quite a bit these days, but this feeds everyone quickly (and you can have seconds if you want!) at a fraction of the cost.
What You’ll Need:
- pancakes: honestly, I know homemade are delish, but the frozen kind work best here.
- maple sausage: I’ve used different types but find maple goes really well in the dish
- shredded cheddar: use your preference! I like a sharp cheddar but American is also pretty good in this dish!
- eggs
- milk
- heavy cream: you could do all milk or all cream if that’s what you have, but I love using both!
- maple syrup: ideally the good stuff! Real maple syrup is so good!
- salt and pepper to taste
How To Make your own McGriddle Overnight Casserole:
I always start by cooking the sausage. You want it crumbly and cooked through and then let it cool. Toss it with the cheese of your choice and set aside.
In a large measuring cup or a bowl, whisk together the eggs, milk, cream, syrup and salt and pepper. Make sure you get those eggs fully incorporated. Then set aside.
Lastly, you want to cut your frozen pancakes in half. At this point you want to work quickly because it’s so much easier to work with the pancakes while they’re still chilled through.
Now grease a 9×9 baking dish and layer your pancakes cut side down in the dish. They will overlap a little.
Add the sausage and cheese mixture on top and make sure you get sausage pieces in between the pancake slices and through the sides. You want it evenly dispersed.
Lastly, pour the egg mixture over the top, making sure to get it between the pancakes.
Cover the dish and refrigerate overnight.
In the morning, remove from the oven and let it bake for 30 minutes uncovered and another 10-15 minutes covered.
Let it rest for a few minutes and then drizzle with maple syrup and enjoy!
Can I make this and bake right away?
While you can, the flavors really develop when you let them sit overnight. I would at least try to refrigerate for a couple of hours.
Can I use homemade pancakes?
You definitely can! I like using frozen because of the convenience and because they’re all perfectly even. But if you want to use homemade, it will definitely still work :)
Do I NEED to use real maple syrup?
No, you don’t have to. I think the taste is so good and makes a difference, but if you only have regular syrup you can. You can also use a little honey in a pinch.
McGriddle Overnight Casserole
Ingredients
- 12 frozen pancakes cut in half
- 10-12 oz maple sausage cooked and crumbled
- 1/3 cup shredded cheddar
- 4 eggs
- 1/2 cup milk
- 1/2 cup heavy cream
- 1.5 tbsp maple syrup
- 1/2 tsp salt
- pinch of pepper
- maple syrup for serving
Instructions
- Grease an 8×8 inch baking dish and then line up the pancakes, cut side down. 12 pieces on each side, and they will slightly overlap.
- Combine the cheddar cheese and sausage and then evenly distribute over the pancakes.
- In a separate bowl, whisk the eggs, milk, cream, syrup, salt and pepper until combined. Pour evenly over the pancakes. Cover with foil and refrigerate 8-12 hours.
- In the morning, preheat oven to 350 and remove the foil. Bake uncovered for 35 minutes and then cover with the foil and bake for another 10-15 or until toothpick inserted in the center of the custard comes out clean.
- Drizzle with additional syrup and serve warm. Enjoy!
